A closer look at the catering
This interesting venture is the culmination of a teaching project set up by 25 senior high school teachers from Escoffier and Jean XXIII high schools (Nouméa and Païta respectively) to offer professional experience to their students.
Sixteen of them actually work in the kitchen (run by Restauration Française) preparing and finishing dishes.
From deliveries through to cleaning everyone is working cheerfully and good-humouredly (one could say with a “Pacific Attitude”!) so that everyone eats well.
